This is seriously the easiest BBQ Pork recipe you will find. It involves two ingredients (plus a little salt and pepper of course) and time to cook unattended so you can carry on with life in the meantime. Serve alongside these easy roasted curried carrots and maybe some greens and you’ve got a delicious, comforting meal that took about as little effort as it gets! It’s also a great option to make ahead and have for lunch all week.

  1. 2.5-3 lb Pork Shoulder Roast (Boston Butt)
  2. 1/2 c Barbecue Sauce (I love Sweet Baby Ray's)
  3. Salt & Pepper to taste
Instructions
  1. Season the pork butt with salt and pepper to taste
  2. Place seasoned roast in slow cooker and top with sauce
  3. Cook on low heat for 9 hours until meat shreds easily
  4. Use two forks to shred the roast and reincorporate the cooking juices left in the crockpot
  5. Serve with extra BBQ sauce (optional)

Ingredients
  1. 10 Carrots
  2. Curry Powder
  3. Ground Ginger
  4. Salt
  5. Pepper
  6. Olive Oil
Instructions
  1. Preheat oven to 425 degrees
  2. Peel and chop carrots into 1/2" medallions
  3. Toss with olive oil and place flat on baking sheet
  4. Sprinkle salt, pepper, ground ginger and curry powder over the carrots making sure each one has a touch of seasoning
  5. Roast for 20 minutes or until carrots are tender
  6. Serve
