I’ll be honest, South Dakota did a number on me in regards to snow. Growing up, seeing those fluffy white flakes fall stirred all kinds of excitement in my soul. It meant no school, all the snow creatures we could imagine and build, and hopefully some snow cream.
These days snow falling just makes me dread driving on slick roads and being stuck inside for days. But at least this snow day still involved some snow cream.
Asheville got hit with a little mini blizzard a few weeks ago, and in anticipation I found myself ordering snow suits, frantically running to every store I could think of trying to find ski bibs for myself, and cussing that I had piles of really nice snow gear just sitting in Turkey.
Luckily I I scored some on a sale rack, and at the last second bought a second pair of bibs for Aubrey in case the ones I ordered didn’t make it in time…which they didn’t.
We were pretty boring snow people. The snow was so high Aubrey couldn’t really walk, and that did not please her in the least. So we wallowed around for a bit, tasted a little for good measure, then scooped up some to take inside to get to work on some snow cream.
I was still on the Whole30 during the snowstorm so I had to get creative on my snow cream. I use coconut milk, date paste, and dark cocoa powder to create a concoction that mildly resembled the snow cream of my childhood. It went against the principals of Whole30, but I figured since I wasn’t celebrating the snow with the hot toddies I normally would, a little compliant snow cream wouldn’t hurt.
